Cabbage soup on pork ribs with sauerkraut

Soup on pork ribs with sauerkraut is a terrific winter soup, and pancakes with meat are a nice filling bonus to it.



Step 1

Cook the broth. My ribs, cut into separate ribs, fill with water, put the pan on high heat and wait for it to boil. As the foam begins to stand out - remove it with a slotted spoon. How it boils - cover with a lid, turn the heat to below average, and cook the broth at a slow boil for about an hour and a half. When the broth is ready, take out the ribs, you can strain the broth.

Step 2

Heat the broth to a boil again and put the potatoes cut into cubes into it. Cook for about 10 minutes. Then add the cherry tomatoes cut in half. At the same time, shred the cabbage, add to the potatoes, add sauerkraut and finely chopped chili to the same place. We cook.

Step 3

At the same time, cut the onion into small cubes, three carrots on a coarse grater. Fry vegetables in a small amount of vegetable oil until golden brown, turn the fire to a "below average" level.

Step 4

We pour about a ladle of broth into a cup, add tomato paste there - mix. Transfer the tomato mixture to a frying pan and simmer over low heat for 10 minutes.

Step 5

Add frying to the soup, add finely chopped garlic and a couple of bay leaves. Cook for another 10 minutes. At the very end, finely chop the dill, sprinkle on top.

Step 6

Return the ribs to the soup. Turn off the heat and, without removing from the burner, let the soup brew for at least half an hour. The cabbage soup becomes much tastier the next day.

Step 7

Pancakes. Usually I use meat from broth cooking, in this case I had a piece of meat that had been cooked earlier. The filling is done like this: meat is scrolled through a meat grinder. Heat the butter in a frying pan (don't be greedy - the more butter, the juicier the filling, but you don't need to overdo it), cut 1 large onion or a couple of medium ones into small cubes, fry in oil until light golden. There - scrolled meat, salt and pepper, mix and heat. We do not fry for a long time. The filling should not come out "dry".

Step 8

Mix boiling water with milk in one container, add eggs, salt, sugar there, beat with a mixer. We begin to add flour, without stopping to beat the dough, at the end baking powder and vegetable oil 4-5 tbsp. l. Fry pancakes in a frying pan, grease with butter before the first pancake, then don't. We stuff ready-made pancakes with meat - it's done!

Cabbage soup with sauerkraut becomes much tastier in a day, therefore in many restaurants such cabbage soup is called "daily soup". And the pancake recipe I shared is perfect! These pancakes are thin, but very elastic and tasty. They are great for stuffing and also for regular serving with sweet sauces or sour cream.
