Baked cauliflower with apple curry

There are many variations on curry powder recipes. Almost all of them contain turmeric, coriander, fenugreek and chili. Madras curry is always spicier than the rest and is redder due to the large amount of chili.



Step 1

For apple curry, peel vegetables and chop finely, sauté in vegetable oil, 5 minutes. Add all the curry, pour in the apple juice and cook until the vegetables are soft. Bake the apple in the microwave until puree, add to the vegetables along with the remaining ingredients. Bring to a boil, grind with a blender.

Step 2

Cut the cauliflower into quarters, remove the leaves and tough stem. Place in a baking dish, pour generously with oil, salt, cover or foil, and bake at 180 ° C for 40 minutes. Open the lid, bake until golden brown, another 15 minutes.

Step 3

Pour some apple curry onto a plate, add cauliflower, add more curry, sprinkle with pumpkin seeds, cabbage and chili powder.
